Refreshing and zesty, these homemade lemon popsicles are made with just a few natural ingredients — real lemon juice, a hint of honey, and purified water. A guilt-free frozen treat that’s hydrating and deliciously tart.

- Lemon Juice 120 ml
- Water 60 ml
- Caster sugar 30 g
- Lemon Zest 1
- Mint 10 leaves

- To make lemon popsicles, start by making the syrup with water and sugar. Put the water and sugar in a saucepan and turn on the heat. Mix well. When the mix comes to a boil, cook for 4-5 minutes, stirring constantly. Then cool the syrup obtained.
- Wash the lemons well, dry them and press them gently with the palms of your hands. This will make it easier to extract the juice.
- Zest the lemon with a micro plane or a fine-mesh grater, and set it aside.
- Now squeeze the lemon juice. If you prefer, you can filter the juice with a narrow mesh strainer.
- Add the syrup to the lemon juice and mix well. Also, add the previously grated lemon zest.
- Pour the mixture into the moulds and fix the sticks. Place the moulds in the freezer and let them cool for at least 4 hours, when your lemon popsicles will be ready to serve.
Tips
Lemon popsicles can be stored in the freezer for a long time without losing their aroma. By replacing lemon juice with orange juice or other fruit juices, you will get popsicles of different colors and flavors.
