- Granulated sugar (200 g / 1 cup)

- All-purpose flour (15 g / 2 tbsp)
- Vanilla extract (1 tsp)
- Almond extract (1/4 tsp)
- Salt (1/2 tsp)
- Unsalted butter (60 g / 4 tbsp), for brown butter
- Honey (4 tbsp / 1/4 cup), divided
- Toasted sliced almonds (35 g / 1/3 cup) for topping
- Powdered sugar (optional, for dusting)
Instructions
- Preheat the oven to 220°C (430°F). Line a 9-inch (23 cm) springform pan with a tall sheet of parchment paper, leaving at least 4–5 cm above the rim.
- In a large bowl, beat the room-temperature cream cheese and granulated sugar until smooth and free of lumps, about 2–3 minutes.
- Add the eggs one at a time, mixing gently after each until incorporated; avoid overbeating.
- Sift in the all-purpose flour, then add vanilla, almond extract, salt, and 2 tablespoons of the honey; stir until just combined.
- Fold in the heavy cream and the toasted almond flour until the batter is silky and homogeneous.
- Pour the batter into the prepared pan and smooth the top with a spatula. Tap once on the counter to release large air bubbles.
- Bake at 220°C (430°F) for 40–55 minutes, or until the top is deeply browned and the center still jiggles slightly when shaken. The edges will puff and crack—this is normal.
- While the cake bakes, make the brown-butter honey: in a small skillet melt the butter over medium heat, swirling until it foams and turns a nutty golden-brown color. Remove from heat and stir in the remaining ~2 tablespoons of honey. Cool slightly.
- When the cheesecake comes out of the oven, carefully drizzle the brown-butter honey over the warm top, allowing some to soak in and some to glaze. Sprinkle with toasted sliced almonds.
- Allow the cheesecake to cool to room temperature in the pan, then refrigerate for at least 4 hours or preferably overnight to set and develop flavor.
- Run a thin knife around the pan, remove the springform, peel away the parchment, slice with a hot dry knife, and serve slightly chilled or at room temperature. Dust with powdered sugar if desired.
