Skillet Cinnamon Apple Dutch Baby with Greek Yogurt

Warm, billowed edges give a light, custardy center studded with tender, cinnamon-kissed apples. The apples are caramelized to a glossy sweetness that balances the egg-rich batter. A tangy spoonful of Greek yogurt and a drizzle of maple cut through the caramel for brightness. Serve straight from the hot skillet for weekend brunch or a cozy breakfast for guests.

Ingredients

  • Unsalted butter (2 tbsp)
  • Granny Smith or Honeycrisp apples, peeled and thinly sliced (2 medium)
  • Light brown sugar (2 tbsp)
  • Ground cinnamon (1 tsp)
  • All-purpose flour (3/4 cup / 95 g)
  • Whole milk (3/4 cup / 180 ml)
  • Large eggs (3)
  • Granulated sugar (1 tbsp)
  • Pure vanilla extract (1 tsp)
  • Salt (pinch)
  • Greek yogurt (3/4 cup for serving)
  • Maple syrup (to serve)
  • Powdered sugar (optional, for dusting)

Instructions

  • Preheat the oven to 425°F (220°C). Place a 10- or 12-inch ovenproof skillet on the middle rack while the oven heats so it gets hot.
  • In a bowl whisk together flour, granulated sugar, and a pinch of salt. In a separate bowl whisk eggs until smooth, then whisk in milk and vanilla. Combine wet and dry ingredients until a smooth batter forms; set aside to rest briefly.
  • Carefully remove the hot skillet from the oven and add 1 tablespoon of butter, swirling to coat the bottom. Return the skillet to the oven just for 30 seconds to melt the butter thoroughly.
  • Meanwhile, melt the remaining 1 tablespoon butter in a medium sauté pan over medium heat. Add apple slices, brown sugar, and cinnamon. Cook, stirring occasionally, until apples are tender and glossy, about 5–7 minutes. Remove from heat.
  • Arrange the caramelized apples in the preheated skillet in an even layer. Pour the batter over the apples, tilting the pan if needed so the batter covers evenly.
  • Immediately transfer the skillet to the oven and bake until the edges are puffed and golden and the center is set, 14–18 minutes. Do not open the oven during the first 12 minutes to preserve the rise.
  • Remove the Dutch baby from the oven. It will deflate slightly as it cools—this is normal. Dust with powdered sugar if using, add dollops of Greek yogurt, and drizzle with maple syrup before serving.
  • Slice directly in the skillet and serve warm, encouraging guests to add extra yogurt and syrup to taste.

Tips or Variations

For a nutty note, sprinkle toasted chopped pecans over the apples before baking. Substitute pear slices and a pinch of ginger for a seasonal twist.
