Ingredients
- Whole milk (1 cup / 240 ml)
- Heavy cream (1 1/2 cups / 360 ml)
- Granulated sugar (1/3 cup / 67 g)
- Orange zest (1 tbsp, from about 1 medium orange)
- Fresh orange juice (1/3 cup / 80 ml)
- Ground cardamom (1/2 tsp) or seeds from 4 green pods, lightly crushed
- Unflavored powdered gelatin (1 packet / 2 1/4 tsp)
- Cold water (2 tbsp) for blooming gelatin
- Vanilla extract (1 tsp)
- Salt (pinch)
- Pistachios, shelled and chopped (3/4 cup / 90 g)
- Brown sugar (2 tbsp)
- Unsalted butter, melted (2 tbsp)
- Sea salt, a small pinch for the crumble
Instructions
- Prepare gelatin: sprinkle the powdered gelatin over 2 tablespoons cold water in a small bowl and let stand to bloom for 5 minutes.
- Warm the dairy: in a medium saucepan combine milk, heavy cream, granulated sugar, orange zest, ground cardamom, and a pinch of salt. Heat over medium-low, stirring occasionally, until the mixture is steaming and the sugar is fully dissolved—do not let it boil.
- Dissolve gelatin: remove the pan from heat, add the bloomed gelatin and stir until completely dissolved. Stir in the orange juice and vanilla, then strain the mixture through a fine mesh sieve into a pitcher to remove zest bits and cardamom husks.
- Chill: divide the mixture among six 4-ounce (120 ml) ramekins or glasses. Let cool to room temperature, then cover and refrigerate until set, at least 4 hours or overnight for best texture.
- Make pistachio crumble: preheat oven to 325°F (160°C). On a small baking sheet toss chopped pistachios with brown sugar, melted butter, and a pinch of sea salt. Spread in an even layer and toast 8–10 minutes, stirring once, until fragrant and lightly golden. Let cool and break into coarse crumbs.
- Serve: run a thin knife around the edges if you prefer to unmold, or serve directly in ramekins. Sprinkle the pistachio crumble over each panna cotta and garnish with a small strip of orange zest or a few whole pistachios. Serve chilled.
Tips or Variations
For a dairy-free version, replace milk and cream with full-fat coconut milk and reduce the coconut flavor by using only 1/4 cup coconut milk plus 1 1/2 cups almond or oat milk. Swap pistachios for toasted almonds and add a drizzle of orange blossom honey when serving for extra floral notes.
