Loaded with mixed herbs and chicken, it’s a simple way the preparation of this wonton soup in under 30 minutes.
Ingredients
- Pork Mince 450 g
- Ginger thumb size piece, fresh, peeled and grated
- Garlic 2 cloves, finely chopped
- Rice Vinegar 30 ml
- Soy Sauce 15 ml
- Sesame Oil 15 ml
- Eggs 1, beaten
- Wonton Wrappers 32, thawed if frozen
- Chicken stock 1,2 l
- Soy Sauce 30 ml
- Rice Vinegar 30 ml
- Sichuan Pepper 15 ml, crushed
- Scallion 4 each, green parts only, finely sliced
Instructions
Steps:
1. Mix together all the ingredients for the wontons apart from the wrappers.
2. Season with salt and pepper and set aside for 30 minutes.
3. Put a teaspoon of the wonton mixture in the middle of each wrapper, moisten the edges with a little water and gather up to make parcels, making sure they are well sealed.
4. Bring the chicken stock, soy sauce, rice vinegar and Sichuan pepper to a boil in a large pan and simmer for 10 minutes.
5. Season with salt and pepper then drop in the wontons, a few at a time, and cook for about 3 minutes or until they have bobbed to the surface.
6. Remove the cooked wontons with a slotted spoon and place into warmed serving bowls.
7. Pour over the broth and scatter with the spring onions.
