Skillet Lemon Thyme Chicken with Honeyed Roasted Carrots

Crisp-edged chicken thighs are pan-seared until golden, then finished in a glossy lemon-thyme butter that coats each bite. Sweet, caramelized carrots get a light honey glaze and roast alongside the chicken for an easy, joined-up flavor. The plate balances bright citrus, warm herb notes, and buttery pan sauce with a touch of sweetness from the carrots. Serve hot for a cozy weeknight dinner or a relaxed weekend supper with a simple green salad.

Ingredients

  • 6 bone-in, skin-on chicken thighs (about 3 lb)
  • Kosher salt and freshly ground black pepper
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
  • 2 tsp fresh thyme leaves (plus extra sprigs)
  • 3 garlic cloves, minced
  • Zest and juice of 1 lemon
  • 1 lb carrots, peeled and halved lengthwise
  • 1 tbsp honey
  • 1/3 cup chicken stock or dry white wine
  • 1 tbsp chopped parsley (optional)

Instructions

  • Preheat the oven to 425°F (220°C). Pat chicken thighs dry and season both sides generously with salt and pepper.
  • Heat an oven-safe 12-inch skillet over medium-high heat and add the olive oil. When the oil shimmers, place the thighs skin-side down and sear without moving until the skin is deep golden and crisp, 6–8 minutes. Flip and cook 1–2 minutes more, then transfer the chicken to a plate.
  • Reduce heat to medium. Add the carrots cut-side down to the same skillet and drizzle with the honey and a pinch of salt. Cook, pressing slightly, until the cut surface begins to brown, about 3–4 minutes.
  • Push the carrots to one side. Add the butter to the empty space, then stir in the thyme and garlic; cook 30 seconds until fragrant. Add lemon zest, lemon juice, and the chicken stock or wine, scraping up browned bits from the pan.
  • Return the chicken to the skillet, arranging thighs skin-side up and nestling them among the carrots. Spoon a little pan liquid over the skin (but keep most on the carrots and pan).
  • Transfer the skillet to the oven and roast until the chicken is cooked through and the carrots are tender, about 15–20 minutes (internal temperature for thighs should read 165°F/74°C).
  • Remove from the oven and let rest 5 minutes. Spoon the pan sauce over the chicken and carrots, sprinkle with chopped parsley, and serve with lemon wedges if desired.

Tips or Variations

  • Use boneless thighs for a shorter cook time—reduce oven time by 5–7 minutes.
  • Swap carrots for halved baby potatoes for a heartier side; increase roast time until tender.
  • For a dairy-free version, skip the butter and finish with an extra splash of olive oil and lemon.
