Skillet Lemon Herb Chicken with Garlic Butter

Bone-in, skin-on chicken thighs (4 pieces, about 1.5–2 lb)Bright lemon and fragrant herbs balance rich garlic butter for a juicy, golden-skinned chicken. The exterior is crisp while the meat stays tender and moist, finished with a glossy pan sauce. Aromatic notes of thyme and parsley lift each bite and the sauce clings to slices beautifully. Serve hot straight from the skillet over rice, mashed potatoes, or with roasted vegetables for weeknight dinners or casual weekend gatherings.

Ingredients

  • Bone-in, skin-on chicken thighs (4 pieces, about 1.5–2 lb)
  • Kosher salt (1 tsp) and black pepper (1/2 tsp)
  • Olive oil (2 tbsp)
  • Unsalted butter (3 tbsp)
  • Garlic (4 cloves, minced)
  • Fresh lemon (zest and juice of 1 lemon)
  • Chicken broth (1/2 cup)
  • Fresh thyme leaves (1 tbsp) or 4–5 sprigs
  • Fresh parsley (2 tbsp, chopped)
  • Red pepper flakes (optional, 1/4 tsp)

Instructions

  1. Pat the chicken thighs dry and season both sides with salt, pepper, and half the lemon zest.
  2. Heat a large oven-safe or heavy skillet over medium-high heat and add the olive oil. When shimmering, place chicken skin-side down and sear until deep golden brown, 6–8 minutes.
  3. Flip the thighs and sear the second side 3–4 minutes, then transfer the chicken to a plate and set aside.
  4. Reduce heat to medium, add the butter to the same skillet and swirl to melt. Add the minced garlic and cook, stirring, 30–45 seconds until fragrant but not browned.
  5. Pour in the lemon juice and chicken broth, scraping up any browned bits from the pan. Stir in the thyme and red pepper flakes if using.
  6. Return the chicken to the skillet, skin-side up, nestling it into the sauce. Spoon some sauce over the thighs, cover or reduce heat to low, and simmer gently 12–15 minutes until the chicken reaches 165°F and juices run clear.
  7. Remove the lid, increase heat to medium-high for 2–3 minutes to thicken the sauce and re-crisp the skin, basting the chicken with the sauce once or twice.
  8. Turn off the heat, stir in the chopped parsley and remaining lemon zest, taste and adjust seasoning. Let the chicken rest in the skillet 3–5 minutes before serving.
  9. Serve the thighs warm with the pan sauce spooned over rice, mashed potatoes, or roasted vegetables.

Tips or Variations

  • For extra citrus brightness, add thin lemon slices to the skillet before simmering. Swap thighs for bone-in chicken breasts, increasing simmer time slightly.
