A glossy pan sauce clings to tender, caramelized chicken thighs with a balance of sweet honey and savory soy. Fresh ginger and scallion bring a bright, peppery lift while garlic rounds the flavor. Steamed rice soaks up the sticky juices, giving each bite a mix of silky sauce and chewy grains. Serve hot for quick weeknight dinners, easy meal prep bowls, or casual weekend guests.
Ingredients
- Boneless skin-on chicken thighs (1.5 lb / 650 g, about 6 pieces)
- Salt and freshly ground black pepper (to taste)
- Vegetable oil (2 tbsp)
- Garlic cloves, minced (3 cloves)
- Fresh ginger, grated (1 tbsp)
- Low-sodium soy sauce (1/4 cup)
- Honey (3 tbsp)
- Rice vinegar (1 tbsp)
- Water or chicken broth (1/4 cup)
- Cornstarch (1 tsp) mixed with 1 tbsp cold water
- Scallions, thinly sliced (3, white and green parts separated)
- Sesame oil (1 tsp) and toasted sesame seeds (1 tsp) for finishing
- Cooked white or jasmine rice (3 cups cooked)
- Red pepper flakes (optional, pinch)
Instructions
- Pat chicken thighs dry, season both sides with salt and pepper. Heat a large skillet over medium-high heat and add vegetable oil.
- Place chicken skin-side down and cook without moving until the skin is deeply golden and crisp, about 6–8 minutes. Flip and cook 3–4 minutes more; transfer to a plate.
- Lower heat to medium. Pour off excess fat, leaving about 1 tbsp in the skillet. Add garlic, grated ginger, and the white parts of the scallions; cook until fragrant, about 30 seconds.
- Stir in soy sauce, honey, rice vinegar, and water or broth. Bring to a gentle simmer, scraping up browned bits from the pan.
- Return the chicken to the skillet, skin-side up, spooning some sauce over each piece. Simmer until the chicken reaches 165°F (74°C) and the sauce thickens slightly, about 6–8 minutes.
- Stir the cornstarch slurry, then pour it into the sauce and simmer 1–2 minutes until glossy and reduced to a sticky consistency.
- Taste and adjust: add a pinch of red pepper flakes for heat or a splash more vinegar for brightness. Drizzle sesame oil and sprinkle sesame seeds.
- Fluff cooked rice and divide among bowls. Slice or leave the thighs whole and place over rice, spooning extra sauce on top.
- Garnish with the green parts of the scallions and an extra sprinkle of sesame seeds before serving.
Tips or Variations
- For a lighter version, use skinless chicken and finish the sauce with a teaspoon of butter for shine.
- Swap jasmine rice for brown rice or cauliflower rice; adjust cooking time and liquid as needed.
