Sheet Pan Lemon-Rosemary Roasted Cauliflower and Carrots

Bright, caramelized edges give these cauliflower and carrots a sweet, savory crust with a tender interior. Fresh rosemary and lemon lift the vegetables with piney, aromatic notes and a bright citrus finish. A hint of honey helps them glaze and brown while garlic and cracked black pepper add savory depth. Serve hot as a weeknight side with roasted chicken or as part of a holiday vegetable spread.

Ingredients

  • Cauliflower (1 large head, about 1.5 lb), cut into florets
  • Carrots (1 lb), peeled and cut lengthwise into 1/2-inch pieces
  • Olive oil (3 tbsp)
  • Fresh rosemary (1 tbsp), finely chopped
  • Garlic (3 cloves), minced
  • Lemon zest (1 tsp) and lemon juice (1 tbsp)
  • Honey (1 tsp) or maple syrup
  • Kosher salt (1 tsp) and freshly ground black pepper (1/2 tsp)
  • Optional: chopped parsley (2 tbsp) for garnish

Instructions

  1. Preheat the oven to 425°F (220°C). Arrange a rimmed baking sheet so the vegetables can roast in a single layer.
  2. In a large bowl whisk together olive oil, chopped rosemary, minced garlic, lemon zest, lemon juice, honey, salt, and pepper until combined.
  3. Add cauliflower florets and carrot pieces to the bowl and toss thoroughly so every piece is evenly coated.
  4. Spread the vegetables across the prepared sheet pan in a single layer with a little space between pieces for browning.
  5. Roast for 20–30 minutes, stirring or flipping once halfway through, until the edges are golden and the carrots are tender when pierced with a fork.
  6. Remove from the oven and taste; add a squeeze of fresh lemon juice and adjust seasoning if needed. Scatter chopped parsley over the top before serving.
  7. Transfer to a platter and serve hot as a side to roasted meats, grain bowls, or with crusty bread.

Tips or Variations

  • For more color and sweetness, toss in halved shallots or cherry tomatoes in the last 10 minutes of roasting.
  • Swap rosemary for thyme or add a pinch of smoked paprika for a warmer, smoky note.
