Saffron Chickpea and Lemon-Arugula Orzo with Toasted Pine Nuts

Bright, fragrant and slightly nutty, this saffron-infused orzo pairs tender pasta with creamy chickpeas for a satisfying bite. A gentle citrus zip from lemon and a peppery finish from arugula balance the floral saffron. Toasted pine nuts add crunchy contrast and a warm, toasty depth while fresh parsley keeps it lively. Serve warm for weeknight dinners or let it come to room temperature for picnics and potlucks.

Ingredients

  • Orzo (1 1/2 cups)
  • Cooked chickpeas (1 15-oz can, drained and rinsed or 1 3/4 cups cooked)
  • Saffron threads (1/8 teaspoon, about 8–10 threads)
  • Hot vegetable broth (2 1/2 cups)
  • Extra-virgin olive oil (2 tablespoons)
  • Shallot (1 small, finely chopped)
  • Garlic (2 cloves, minced)
  • Lemon (zest and 2 tablespoons juice)
  • Fresh arugula (2 cups, packed)
  • Toasted pine nuts (1/3 cup)
  • Fresh parsley (1/4 cup, chopped)
  • Salt (1 teaspoon, plus more to taste)
  • Freshly ground black pepper (1/2 teaspoon)
  • Optional: nutritional yeast (2 tablespoons) for savory depth

Instructions

  1. Place saffron threads in a small bowl and pour 1/4 cup of the hot vegetable broth over them. Let steep for 5–10 minutes to bloom the color and aroma.
  2. Heat 1 tablespoon olive oil in a medium saucepan over medium heat. Add the chopped shallot and cook until translucent, about 3 minutes.
  3. Add the minced garlic and orzo and toast, stirring, for 1–2 minutes until the orzo becomes slightly golden and fragrant.
  4. Pour in the remaining vegetable broth and the saffron-infused liquid, stir once, and bring to a gentle boil. Reduce heat, cover, and simmer for 8–10 minutes until orzo is tender but not mushy. Stir once or twice to prevent sticking.
  5. While the orzo cooks, warm a small skillet over medium heat and toast the pine nuts, shaking the pan, until golden and fragrant, 2–3 minutes. Transfer to a plate to cool.
  6. When the orzo is done, stir in the chickpeas, lemon zest, and lemon juice. Cook uncovered for 1–2 minutes to heat the chickpeas through and let flavors meld.
  7. Remove the pan from heat and fold in the arugula, parsley, remaining tablespoon of olive oil, salt, pepper, and nutritional yeast if using. Toss gently until the arugula wilts slightly from residual heat.
  8. Adjust seasoning to taste. Transfer to a serving bowl and sprinkle with the toasted pine nuts for crunch just before serving.
  9. Serve warm as a main or side, or cool to room temperature for a hearty salad—leftovers keep well refrigerated for 2–3 days.

Tips or Variations

  • Swap arugula for baby spinach for a milder green, or add roasted cherry tomatoes for sweetness.
  • Use gluten-free orzo or small rice-shaped pasta to make the dish gluten-free.
