Roasted Delicata Squash with Cumin and Pecans

Thin-skinned delicata caramelizes into tender, slightly sweet crescents with crisped edges. Warm cumin and a bright squeeze of lemon cut through the richness, while toasted pecans add a satisfying crunchy contrast. A light honey glaze brings everything together without overpowering the squash’s natural flavor. Serve hot as a holiday side, alongside roasted meats, or tossed into autumn grain bowls.

Ingredients

  • 2 medium delicata squash (about 1½ lb / 700 g)
  • 2 tbsp extra-virgin olive oil
  • 1 tsp ground cumin
  • ½ tsp smoked paprika
  • 1 tsp kosher salt (adjust to taste)
  • ½ tsp freshly ground black pepper
  • 1 tbsp honey
  • 1 tbsp fresh lemon juice
  • ⅓ cup toasted pecans, roughly chopped
  • 1 tbsp chopped flat-leaf parsley (optional, for garnish)
  • Pinch of red pepper flakes (optional, for heat)

Instructions

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment or a silicone mat for easy cleanup.
  2. Trim the ends of each squash, slice in half lengthwise, scoop out the seeds with a spoon, then cut into ¼–⅓-inch thick rounds.
  3. In a large bowl combine the olive oil, cumin, smoked paprika, salt, and pepper. Add the squash slices and toss until evenly coated.
  4. Arrange the slices in a single layer on the prepared sheet, spacing them so air can circulate; overcrowding prevents crisping.
  5. Roast for 10–12 minutes, flip the slices, then roast another 8–12 minutes until edges are browned and centers are tender.
  6. While the squash roasts, warm a small skillet over medium heat and toast the pecans, stirring, until fragrant (2–3 minutes). Roughly chop and set aside.
  7. Whisk the honey and lemon juice together. During the last 1–2 minutes of roasting, brush the honey-lemon mixture over the squash and return to the oven so it glossy-sweetens the edges.
  8. Remove from the oven, scatter the toasted pecans and parsley over the warm squash, and finish with a pinch of red pepper flakes if using. Serve immediately.

Tips or Variations

  • Swap pecans for toasted pumpkin seeds or walnuts for a different crunch and flavor profile.
  • For a savory twist, omit the honey and finish with a drizzle of browned butter and a sprinkle of flaky sea salt.
