Golden, crisp-skinned chicken meets sweet, caramelized fennel and a bright lemon-butter pan sauce for a dish that’s both comforting and lively. The meat stays juicy under a skin bronzed with olive oil and thyme, while slices of fennel soften and pick up sticky browned edges. A squeeze of lemon and a spoonful of the buttery pan juices finish the plate with clean acidity and silk. Serve this for a relaxed weeknight dinner or a small Sunday supper with roasted potatoes and a green salad.
Ingredients
- 4 bone-in, skin-on chicken thighs (about 1¾ lb / 800 g)
- 1 medium fennel bulb, top removed and thinly sliced (reserve fronds)
- 1 lemon (zest + juice), plus 4 thin slices for roasting
- 3 tbsp unsalted butter
- 2 tbsp olive oil
- 3 garlic cloves, smashed
- 1 tsp fresh thyme leaves (or ½ tsp dried)
- ¼ cup low-sodium chicken stock or dry white wine
- 1 tsp honey or maple syrup (optional, for fennel glaze)
- Salt and freshly ground black pepper
- Fresh fennel fronds or parsley for garnish
Instructions
- Preheat oven to 425°F (220°C). Pat the chicken thighs very dry with paper towels and season both sides generously with salt and pepper.
- Heat a large ovenproof skillet over medium-high heat and add the olive oil. When shimmering, place the chicken skin-side down and sear without moving 6–8 minutes, until the skin is deep golden and releases easily.
- Flip the thighs and scatter the sliced fennel and smashed garlic around them. Tuck lemon slices between pieces and sprinkle thyme over the top. Cook 2 minutes to warm the fennel.
- Add the butter and let it melt, spooning some over the chicken. Transfer the skillet to the oven and roast 18–22 minutes, until an instant-read thermometer at the thickest part reads 165°F (74°C).
- Remove the skillet and transfer the chicken to a cutting board to rest. Place the skillet back on the stove over medium heat and pour in the chicken stock (or wine), scraping up any browned bits with a wooden spoon.
- Stir in lemon juice, zest, and honey if using. Simmer 2–3 minutes until the sauce reduces slightly and coats the fennel.
- Return the chicken to the pan just to reheat and spoon sauce over the pieces. Taste and adjust seasoning with salt and pepper.
- Serve each thigh with a generous spoonful of fennel and lemon-butter sauce, garnished with chopped fennel fronds or parsley.
Tips or Variations
- For extra crisp skin, broil for 1–2 minutes at the end—watch closely to avoid burning.
- Swap fennel for thinly sliced shallots and add a handful of halved baby potatoes to the pan for a one-pan meal.
