Sweet, caramelized roasted carrots meet nutty, chewy freekeh for a bowl that’s both comforting and bright. A creamy lemon-tahini drizzle lifts the flavors while toasted almonds add a satisfying crunch. Fresh parsley and pomegranate seeds bring herbaceous, tangy pops. Serve warm as a hearty weeknight dinner or at room temperature for a make-ahead lunch. It also travels well for packed lunches or casual gatherings.
Ingredients
- 1 cup cracked freekeh (about 170 g)
- 1 3/4 cups water or vegetable broth
- 1 lb (450 g) carrots, peeled and halved lengthwise
- 2 tbsp olive oil
- 2 tsp za'atar or 1 tsp smoked paprika + 1 tsp dried thyme
- Salt and freshly ground black pepper
- 1/3 cup tahini
- 3 tbsp lemon juice (about 1 lemon)
- 1 tbsp maple syrup or agave
- 1 small garlic clove, grated or minced
- Warm water to thin (2–4 tbsp)
- 1/4 cup sliced almonds, toasted
- 1/3 cup chopped fresh parsley
- 2 scallions, thinly sliced
- 1/4 cup pomegranate seeds (optional, for brightness)
Instructions
- Preheat the oven to 425°F (220°C). Toss the halved carrots with 1 tbsp olive oil, za’atar, a generous pinch of salt and pepper. Spread on a rimmed baking sheet in a single layer.
- Roast carrots until tender and caramelized at the tips, 22–28 minutes, turning once halfway through. Remove from oven and keep warm.
- While carrots roast, rinse the freekeh under cold water. Combine freekeh and 1 3/4 cups water or broth in a saucepan, bring to a simmer, cover, and cook until tender and chewy, about 18–22 minutes. Drain any excess and fluff with a fork.
- Make the lemon-tahini drizzle: whisk together tahini, lemon juice, maple syrup, garlic, 2 tbsp warm water and a pinch of salt until smooth. Add more warm water, a teaspoon at a time, to reach a pourable consistency.
- Toast the almonds in a dry skillet over medium heat, shaking the pan, until fragrant and lightly browned, about 3–4 minutes. Watch carefully to prevent burning.
- In a large bowl, combine the cooked freekeh, roasted carrots, parsley, scallions, and pomegranate seeds. Toss gently to mix.
- Drizzle most of the lemon-tahini over the bowl and toss again to coat. Taste and adjust with more lemon, salt, or a little olive oil if needed.
- Serve sprinkled with toasted almonds and additional parsley. Leftovers keep covered in the refrigerator for up to 4 days and are lovely at room temperature.

- Swap freekeh for farro or brown rice if needed; adjust cooking time accordingly.
- Add roasted chickpeas or grilled tofu for extra protein, or a pinch of cayenne in the dressing for heat.
