Pumpkin Casserole

This cozy and comforting Pumpkin Casserole is the perfect side dish for any autumn or holiday meal. With a silky texture and a hint of warm cinnamon, it blends the sweetness of pumpkin with creamy richness and a golden-brown finish. It’s incredibly easy to make and pairs beautifully with savory main courses.

Ingredients

  • 2 cups pumpkin puree (fresh or canned)
  • 1 cup evaporated milk
  • 1 cup white sugar
  • ½ cup self-rising flour
  • 2 large eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • ½ cup butter, melted
  • 2 pinches ground cinnamon (or more to taste)

Instructions

  • Preheat & Prepare:
    Preheat your oven to 350°F (175°C). Lightly grease a medium-sized casserole dish or a 9×9-inch baking dish with butter.

  • Mix the Base:
    In a large mixing bowl, whisk together the pumpkin puree, evaporated milk, and sugar until smooth.

  • Add the Rest:
    Stir in the self-rising flour, eggs, vanilla extract, melted butter, and ground cinnamon. Mix gently until all ingredients are fully combined into a creamy batter.

  • Bake to Perfection:
    Pour the mixture into your prepared casserole dish. Bake in the preheated oven for about 1 hour, or until the top is lightly golden and a knife inserted in the center comes out clean.

  • Serve Warm:
    Allow the casserole to cool slightly before serving. Enjoy it warm as a comforting side dish, or drizzle a bit of honey or maple syrup on top for a sweet twist.
