Mediterranean Chickpea Salad

This vibrant and wholesome salad is a nutrient-rich blend of chickpeas, black olives, feta cheese, red onion, and fresh herbs. Bursting with Mediterranean flavors, it’s a refreshing and satisfying dish that supports strong bones and overall wellness. Perfect as a light lunch, side dish, or meal prep option—just toss everything together and serve chilled.

Ingredients

  • Chickpeas 250 gr (tinned, cooked)
  • Black Olives 80 gr
  • Feta cheese 150 gr
  • Red onion 1
  • Parsley 1 sprig
  • Lemon Juice
  • half a lemon
  • Extra virgin olive oil
  • Kosher Salt
  • Black Pepper

Instructions

Steps:

  1. To prepare the Mediterranean chickpea salad, start with the dressing. Put three tablespoons of oil in a jar. Add a tablespoon of lemon juice, some salt, pepper and chopped parsley.
  2. Close the jar tightly and shake it for a few minutes to create a dense and uniform vinaigrette.
  3. Break up the feta cheese with your hands.
  4. Peel the onion and cut it into thin slices.
  5. Wash the cucumbers well and remove the skin in strips with a potato peeler. In this way you will have less peel waste and add colour to the salad. Cut the cucumbers into slices.
  6. Put all the ingredients on a plate, including the chickpeas, or in a salad bowl, season with the vinaigrette and toss or mix well.
