- Chickpeas 250 gr (tinned, cooked)
 - Black Olives 80 gr
 - Feta cheese 150 gr
 - Red onion 1
 - Parsley 1 sprig
 - Lemon Juice
 - half a lemon
 - Extra virgin olive oil
 - Kosher Salt
 - Black Pepper

- To prepare the Mediterranean chickpea salad, start with the dressing. Put three tablespoons of oil in a jar. Add a tablespoon of lemon juice, some salt, pepper and chopped parsley.
 - Close the jar tightly and shake it for a few minutes to create a dense and uniform vinaigrette.
 - Break up the feta cheese with your hands.
 - Peel the onion and cut it into thin slices.
 - Wash the cucumbers well and remove the skin in strips with a potato peeler. In this way you will have less peel waste and add colour to the salad. Cut the cucumbers into slices.
 - Put all the ingredients on a plate, including the chickpeas, or in a salad bowl, season with the vinaigrette and toss or mix well.
