Crispy Harissa Roasted Carrots with Yogurt Drizzle

Sweet roasted carrots gain a smoky, spicy kick from harissa. Edges caramelize crisp while centers remain tender and yielding. A cool lemony yogurt drizzle balances heat with bright creaminess. Serve warm alongside grilled meats, weeknight mains, or festive spreads.

Ingredients

  • 1 lb (450 g) carrots, peeled and cut on a diagonal into 2-inch pieces
  • 2 tbsp olive oil
  • 1 tbsp harissa paste (adjust to taste)
  • 1 tsp honey or maple syrup
  • 1/2 tsp smoked paprika
  • 1/2 tsp kosher salt, plus extra to taste
  • 1/4 tsp freshly ground black pepper
  • 1/2 cup plain Greek yogurt
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 small garlic clove, finely minced or grated
  • 2 tbsp chopped fresh parsley (for garnish)
  • 2 tbsp toasted sliced almonds or pistachios (optional, for crunch)

Instructions

  1. Preheat the oven to 425°F (220°C). Toss the carrot pieces with olive oil, harissa paste, honey, smoked paprika, salt, and pepper in a large bowl until evenly coated.
  2. Spread the carrots in a single layer on a rimmed baking sheet, giving pieces room so they can caramelize rather than steam.
  3. Roast for 20–25 minutes, turning once halfway through, until edges are deeply browned and carrots are fork-tender.
  4. While carrots roast, whisk together the Greek yogurt, lemon juice, lemon zest, and minced garlic in a small bowl. Taste and season with a pinch of salt if needed.
  5. When carrots are done, transfer them to a serving platter and spoon the yogurt drizzle over the warm carrots, letting it streak and pool slightly.
  6. Scatter chopped parsley and toasted nuts over the top for color and crunch. Add an extra drizzle of olive oil or a squeeze of lemon if desired.
  7. Serve immediately as a warm side dish alongside roasted or grilled proteins, or as part of a vegetable-forward spread.

Tips or Variations

  • Make it milder by using less harissa or swap for smoked paprika and a pinch of cayenne for control.
  • Try baby carrots halved for quicker roasting or add a splash of orange juice to the yogurt for a citrus twist.
