Tender and slightly sweet on the inside with a golden, caramelized crust on the outside and a glossy garlic-herb finish. A gentle lemon brightness and fresh parsley lift the richness of butter and roasted garlic. Comforting enough for weeknight dinners but polished enough for a holiday plate or dinner party. Serve hot alongside roast meats, grilled fish, or as part of a composed vegetable spread.
Ingredients
- 1 1/2 lb baby turnips, tops trimmed, scrubbed (leave small greens if fresh)
- 2 tbsp extra-virgin olive oil
- 1/2 tsp fine sea salt, plus more to finish
- 1/4 tsp freshly ground black pepper
- 2 tbsp unsalted butter
- 3 cloves garlic, finely minced
- 1 tbsp fresh thyme leaves (or 1 tsp dried thyme)
- 1 tsp lemon zest, plus lemon wedges to serve
- 2 tbsp chopped fresh parsley
- Pinch of red pepper flakes (optional)
Instructions
- Preheat the oven to 425°F. Arrange a rimmed baking sheet and line with parchment or a light drizzle of oil.
- Trim the turnips: cut any long stems, halve larger ones so pieces are roughly uniform (about 1–1½ inches).
- In a bowl, toss the turnips with olive oil, salt, and pepper until evenly coated. Add red pepper flakes if you like a touch of heat.
- Spread the turnips cut-side down in a single layer on the sheet to maximize browning. Roast for 22–28 minutes, tossing once halfway, until deeply golden and fork-tender.
- While the turnips roast, melt the butter in a small skillet over medium-low heat. Add the minced garlic and thyme and cook 45–60 seconds until fragrant—don’t let the garlic brown.
- Remove the skillet from heat and stir in lemon zest and chopped parsley to make the garlic-herb butter.
- Once the turnips are roasted, transfer them to the skillet or drizzle the butter over them on the sheet. Toss gently to coat; return to the oven for 2–3 minutes to set the glaze. For extra char, broil 1 minute while watching closely.
- Transfer to a serving dish, finish with a light sprinkle of flaky sea salt and a squeeze of lemon. Serve immediately.
Tips or Variations
- Swap in small carrots or baby potatoes for a similar roast; add 2 tbsp grated hard cheese (Parmesan or Pecorino) just before serving for nuttier depth.
