Creamy Mushroom and Spinach Stuffed Chicken Breasts

Juicy chicken breasts are filled with a creamy sautéed mushroom and spinach mixture that melts into the meat as it bakes. The filling is rich and earthy with a silky texture, brightened by lemon zest and a hint of thyme. A quick sear before roasting creates a golden crust while keeping the interior tender and moist. Serve warm for a comforting weeknight dinner or for an understated, elegant weekend meal with simple sides.

Ingredients

  • Boneless skinless chicken breasts (4, about 6–8 oz each)
  • Salt and black pepper (to taste)
  • Olive oil (2 tbsp)
  • Unsalted butter (1 tbsp)
  • Cremini or button mushrooms, chopped (8 oz / 225 g)
  • Fresh spinach, packed (4 cups / 120 g)
  • Shallot, finely chopped (1)
  • Garlic cloves, minced (2)
  • Cream cheese, softened (4 oz / 115 g)
  • Grated Parmesan cheese (1/3 cup / 30 g)
  • Lemon zest (1 tsp)
  • Fresh thyme leaves (1 tsp) or dried thyme (1/2 tsp)
  • Pinch red pepper flakes (optional)
  • Chicken broth or dry white wine (1/4 cup, optional)
  • Toothpicks (for sealing pockets, optional)

Instructions

  1. Preheat the oven to 375°F (190°C). Pat the chicken breasts dry and cut a horizontal pocket into the thick side of each breast; season both inside and out with salt and pepper.
  2. Heat the olive oil and butter in a large skillet over medium heat. Add the chopped shallot and cook until translucent, about 2 minutes.
  3. Add the mushrooms and cook, stirring occasionally, until browned and most moisture has evaporated, about 5–7 minutes.
  4. Stir in the garlic and cook 30 seconds, then add the spinach and cook until wilted. If the pan is dry, splash in the chicken broth or wine and scrape up any browned bits, cooking until liquid mostly evaporates.
  5. Remove the skillet from the heat and fold in the cream cheese, Parmesan, lemon zest, thyme, and red pepper flakes if using. Taste and adjust seasoning.
  6. Spoon about 1/3 to 1/2 cup of the filling into each chicken pocket, pressing gently to distribute. Secure openings with toothpicks if needed.
  7. Heat a tablespoon of oil in an ovenproof skillet over medium-high heat. Sear the stuffed breasts 2–3 minutes per side until golden but not fully cooked through.
  8. Transfer the skillet to the preheated oven (or move breasts to a baking dish) and bake 18–22 minutes, until an instant-read thermometer inserted into the thickest part reads 165°F (74°C).
  9. Remove from the oven and let the chicken rest 5 minutes. Discard toothpicks, slice if desired, and spoon any pan juices over the breasts before serving.
  10. Serve with roasted potatoes, steamed green beans, or a light salad to complement the rich filling.

Tips or Variations

  • For a lighter version, substitute half the cream cheese with low-fat ricotta or Greek yogurt (add ricotta off heat to avoid breaking).
  • Add crumbled cooked bacon or chopped sun-dried tomatoes to the filling for extra savory depth.
  • To make ahead, prepare filling and stuff breasts, then refrigerate up to 24 hours; sear and bake before serving.
