Cream of Fresh Tomato Soup

This comforting classic is made with ripe, fresh tomatoes simmered to perfection and blended into a smooth, creamy texture. Infused with aromatic herbs and a touch of cream, it’s a warm and velvety soup that’s perfect for cozy days or as a starter to any meal. Serve with a slice of crusty bread or a grilled cheese sandwich for the ultimate pairing.

Ingredients

  • 2 large tomatoes, chopped
  • ½ cup chopped onion
  • ½ teaspoon white sugar
  • salt to taste
  • ground black pepper to taste
  • 2 tablespoons margarine
  • 2 tablespoons all-purpose flour
  • 2 cups milk

Instructions

Steps:

  1. Simmer tomatoes, onions, sugar, and salt and pepper. Once onions are soft, strain. Set liquid aside.
  2. In a saucepan, melt the butter or margarine. Stir in the flour. Whisk in the milk, and cook until thickened. Slowly add the reserved tomato liquid, and gently heat. Serve hot.
