This simple turkey salad mixes leftover turkey meat with a creamy, flavourful blend of mayo, Dijon mustard, green apple, cranberries, walnuts etc.
- 6 egglife® wraps – any flavor
- 2 cups chopped cooked turkey
- 1 cup chopped celery (about 2 stalks)
- ½ cup chopped apple
- ½ cup chopped walnuts or pecans
- ½ cup dried cranberries
- 1/3 cup mayonnaise
- 1 tbsp dijon mustard
- 1 cup baby arugula
- fresh ground pepper to taste
- Combine turkey, celery, apple, nuts, cranberries, mayonnaise and Dijon in a large bowl.
- Mix until well combined.
- Add fresh ground pepper to taste.
- Line an egglife wrap with baby arugula, top with the turkey salad, wrap and enjoy!
