Cardamom Citrus Semifreddo with Pistachio and Honey Crumble

Silky, airy semifreddo perfumed with warm cardamom and bright citrus.
Crunchy pistachio and honey crumble provides nutty, caramelized contrast.

Ingredients

  • 4 large eggs, separated
  • 1 1/2 cups (360 ml) heavy cream, cold
  • 1 teaspoon ground cardamom
  • 1 tablespoon orange zest (from 1 large orange)
  • 2 tablespoons orange juice
  • 1 teaspoon vanilla extract
  • 3/4 cup (100 g) toasted shelled pistachios, roughly chopped
  • 1/3 cup (30 g) rolled oats
  • 1/4 cup (35 g) all-purpose flour
  • 3 tablespoons unsalted butter, melted
  • 2 tablespoons honey, plus extra for drizzling
  • Pinch of fine salt
