Brown Butter Balsamic Roasted Root Vegetables

This mix of roast carrots, parsnips, sweet potatoes and beets caramelizes at the edges while staying tender inside. A nutty brown-butter finish deepens the flavor and the balsamic-honey glaze adds a glossy sweet-tart counterpoint. Crisped thyme and a hint of flaky salt lift the vegetables so they never feel one-note. Serve warm beside roast chicken, pork, or as a hearty holiday side.

Ingredients

  • 1 lb carrots, peeled and cut into 1-inch pieces
  • 1 lb parsnips, peeled and cut into 1-inch pieces
  • 1 medium sweet potato (about 10 oz), peeled and cubed
  • 8 oz small beets, peeled and quartered
  • 1 small red onion, cut into wedges
  • 2 tbsp olive oil
  • Salt and freshly ground black pepper (to taste)
  • 4 tbsp unsalted butter (for browning)
  • 2 tbsp good-quality balsamic vinegar
  • 1 tbsp honey or maple syrup
  • 1 tsp fresh thyme leaves plus extra sprigs for garnish
  • Flaky sea salt for finishing (optional)

Instructions

  • Preheat the oven to 425°F (220°C). Line a large rimmed baking sheet with foil or parchment for easier cleanup.
  • Toss the carrots, parsnips, sweet potato, beets and red onion with olive oil, 1 tsp salt and a few grinds of black pepper. Spread in a single layer on the prepared sheet, leaving a little space between pieces.
  • Roast on the middle rack for 25–30 minutes, stirring once or twice, until vegetables are tender and edges are nicely browned. Cooking time will vary slightly depending on size; beets and sweet potato may need the full time.
  • While the vegetables roast, brown the butter: melt butter in a small skillet over medium heat, swirling occasionally, until foam subsides and the milk solids turn golden and smell nutty, about 3–4 minutes. Remove from heat immediately to avoid burning.
  • Stir the balsamic vinegar, honey and the teaspoon of thyme into the browned butter. Return briefly to very low heat just to combine and slightly reduce for 30 seconds, then remove from heat.
  • When vegetables are done, transfer the pan to the stovetop or leave on the sheet. Drizzle the brown-butter balsamic glaze over the hot vegetables and toss gently to coat, using tongs or two spatulas.
  • Scatter extra thyme sprigs over the pan and roast for an additional 4–5 minutes to set the glaze and deepen caramelization.
  • Remove from oven, taste and adjust seasoning. Finish with a pinch of flaky sea salt if desired and serve warm.

Tips or Variations

  • Swap or add turnips, fennel, or rutabaga for variety; cut larger roots a bit smaller so everything cooks evenly.
  • Make the brown-butter glaze ahead and refrigerate up to 48 hours—reheat gently before tossing with vegetables.
