- 1 cup plain soy milk
- 1 tablespoon apple cider vinegar
- 1 ½ cups unbleached all-purpose flour
- 1 cup white sugar
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- ½ teaspoon salt
- ⅓ cup canola oil
- ¼ cup water
- 1 tablespoon lemon juice
- 1 tablespoon vanilla extract
- ¼ teaspoon almond extract

Preheat the oven to 350 degrees F (175 degrees C). Grease and flour an 8×8-inch baking dish.
