Nutty warm quinoa meets crisp greens and silky, caramelized tofu for a breakfast bowl that tastes like a calm morning. The sesame-soy glaze is glossy and slightly sweet with a gentle ginger bite, while avocado and cucumber add coolness and cream. Textures play off one another — chewy quinoa, tender wilted spinach, and crunchy scallions and seeds. Serve this any morning you want something nourishing that still feels a little special.
Ingredients
- Quinoa (1 cup, rinsed)
- Water or low-sodium vegetable broth (2 cups)
- Extra-virgin olive oil (1 tbsp)
- Firm tofu (14 oz block, pressed and cut into 1/2-inch cubes)
- Low-sodium soy sauce or tamari (2 tbsp)
- Sesame oil (1 tsp)
- Maple syrup or honey (1 tbsp)
- Rice vinegar (1 tsp)
- Fresh ginger (1 tsp, grated)
- Garlic (1 clove, minced)
- Baby spinach or baby kale (4 cups packed)
- Scallions (2, thinly sliced)
- Cucumber (1/2, thinly sliced or ribboned)
- Avocado (1, sliced)
- Toasted sesame seeds (1 tbsp)
- Crushed red pepper or chili flakes (pinch, optional)
- Salt and black pepper (to taste)
- Lime wedges (for serving)
Instructions
- Cook the quinoa: toast the rinsed quinoa in a dry saucepan over medium heat for 2 minutes until fragrant, then add 2 cups water or broth and a pinch of salt. Bring to a boil, reduce to a simmer, cover, and cook 12–15 minutes until water is absorbed. Fluff with a fork and keep warm.
- Make the glaze: whisk together soy sauce, sesame oil, maple syrup, rice vinegar, grated ginger, and minced garlic in a small bowl. Taste and adjust balance of sweet and salty.
- Pan-fry the tofu: heat olive oil in a nonstick skillet over medium-high. Add tofu cubes in a single layer and cook without moving for 3–4 minutes to develop a crust. Toss and brown other sides, about 6–8 minutes total.
- Glaze the tofu: pour the sauce over the browned tofu, lower heat, and cook for 2–3 minutes until the sauce thickens and coats the cubes. Remove from heat and set aside.
- Wilt the greens: in the same skillet (wipe it first if needed), add a splash of water or a little oil and the baby spinach or kale. Cook briefly, tossing, until just wilted, 1–2 minutes. Season lightly with salt and pepper.
- Assemble bowls: divide warm quinoa between two bowls. Top with wilted greens, glazed tofu, cucumber ribbons, avocado slices, and scallions. Sprinkle toasted sesame seeds and a pinch of chili flakes if using.
- Finish and serve: squeeze a lime wedge over each bowl and give a final grind of black pepper. Eat immediately while the quinoa and tofu are warm.
Tips or Variations
- Swap quinoa for cooked brown rice, farro, or bulgur for a different chew and keep leftovers hearty.
- For extra richness, top each bowl with a soft-poached or fried egg; for a vegan option, use maple and tamari and skip the egg.
