Ingredients
- Boneless skin-on chicken thighs (about 1 1/4–1 1/2 lb / 600–700 g), trimmed
- Seedless red grapes (about 2 cups / 300 g), halved
- Olive oil (2 tbsp)
- Unsalted butter (1 tbsp)
- Garlic (2 cloves), minced
- Balsamic vinegar (1/3 cup / 80 ml)
- Honey (2 tbsp)
- Low-sodium chicken broth (1/4 cup / 60 ml)
- Fresh thyme leaves or 1 tsp dried thyme
- Salt and black pepper
- Optional: 1 tsp cornstarch mixed with 1 tbsp water (for a thicker glaze)

Instructions
- Preheat the oven to 425°F (220°C). Pat the chicken thighs dry and season both sides generously with salt and pepper.
- Heat 1 tablespoon olive oil in a large ovenproof skillet over medium-high heat until shimmering. Place chicken skin-side down and sear without moving for 6–8 minutes, until the skin is deep golden and crisp.
- Flip the thighs and cook 2 minutes more to brown the second side. Remove the chicken to a plate but leave the fat and browned bits in the skillet.
- Add the remaining 1 tablespoon olive oil and the butter to the skillet. Stir in the minced garlic and cook 30 seconds until fragrant, then add the halved grapes and thyme. Toss briefly to coat.
- Return the chicken to the skillet, skin-side up, nestling it among the grapes. Transfer the skillet to the oven and roast 12–15 minutes, until the chicken reaches 165°F (74°C) and the grapes are softened and slightly caramelized.
- Carefully remove the skillet from the oven and transfer the chicken and grapes to a warm plate. Set the skillet over medium heat on the stovetop.
- Add the balsamic vinegar, honey, and chicken broth to the skillet, scraping up any browned bits. Simmer 2–3 minutes until the sauce reduces and becomes glossy. If you prefer a thicker glaze, whisk in the cornstarch slurry and simmer another minute.
- Stir the sauce and adjust seasoning with salt and pepper. Return the chicken and grapes to the skillet, spooning the glaze over the top. Sprinkle with lemon zest if using, then serve immediately.
