- 1 lb (450 g) carrots, peeled and cut on a diagonal into 2-inch pieces
- 2 tbsp olive oil
- 1 tbsp harissa paste (adjust to taste)
- 1 tsp honey or maple syrup
- 1/2 tsp smoked paprika
- 1/2 tsp kosher salt, plus extra to taste
- 1/4 tsp freshly ground black pepper
- 1/2 cup plain Greek yogurt
- 1 tbsp fresh lemon juice
- 1 tsp lemon zest
- 1 small garlic clove, finely minced or grated
- 2 tbsp chopped fresh parsley (for garnish)
- 2 tbsp toasted sliced almonds or pistachios (optional, for crunch)
Instructions
- Preheat the oven to 425°F (220°C). Toss the carrot pieces with olive oil, harissa paste, honey, smoked paprika, salt, and pepper in a large bowl until evenly coated.
- Spread the carrots in a single layer on a rimmed baking sheet, giving pieces room so they can caramelize rather than steam.
- Roast for 20–25 minutes, turning once halfway through, until edges are deeply browned and carrots are fork-tender.
- While carrots roast, whisk together the Greek yogurt, lemon juice, lemon zest, and minced garlic in a small bowl. Taste and season with a pinch of salt if needed.
- When carrots are done, transfer them to a serving platter and spoon the yogurt drizzle over the warm carrots, letting it streak and pool slightly.
- Scatter chopped parsley and toasted nuts over the top for color and crunch. Add an extra drizzle of olive oil or a squeeze of lemon if desired.
