- Bone-in, skin-on chicken thighs (4 pieces, about 1.5–2 lb)
- Kosher salt (1 tsp) and black pepper (1/2 tsp)
- Olive oil (2 tbsp)
- Unsalted butter (3 tbsp)
- Garlic (4 cloves, minced)
- Fresh lemon (zest and juice of 1 lemon)
- Chicken broth (1/2 cup)
- Fresh thyme leaves (1 tbsp) or 4–5 sprigs
- Fresh parsley (2 tbsp, chopped)
- Red pepper flakes (optional, 1/4 tsp)
Instructions
- Pat the chicken thighs dry and season both sides with salt, pepper, and half the lemon zest.
- Heat a large oven-safe or heavy skillet over medium-high heat and add the olive oil. When shimmering, place chicken skin-side down and sear until deep golden brown, 6–8 minutes.
- Flip the thighs and sear the second side 3–4 minutes, then transfer the chicken to a plate and set aside.
- Reduce heat to medium, add the butter to the same skillet and swirl to melt. Add the minced garlic and cook, stirring, 30–45 seconds until fragrant but not browned.
- Pour in the lemon juice and chicken broth, scraping up any browned bits from the pan. Stir in the thyme and red pepper flakes if using.
- Return the chicken to the skillet, skin-side up, nestling it into the sauce. Spoon some sauce over the thighs, cover or reduce heat to low, and simmer gently 12–15 minutes until the chicken reaches 165°F and juices run clear.
- Remove the lid, increase heat to medium-high for 2–3 minutes to thicken the sauce and re-crisp the skin, basting the chicken with the sauce once or twice.
- Turn off the heat, stir in the chopped parsley and remaining lemon zest, taste and adjust seasoning. Let the chicken rest in the skillet 3–5 minutes before serving.
