Citrus Ricotta Toast with Honeyed Figs and Pistachios

This toast combines creamy ricotta whipped with bright citrus zest for a tangy, silky base. Warm honey-glazed figs add a soft, jammy sweetness and gentle caramel notes. Toasted pistachios bring crunchy, nutty contrast and a pleasant aroma. Serve immediately for a leisurely weekend breakfast or an elegant brunch plate.

Ingredients

  • Sourdough or country bread (4 slices)
  • Whole-milk ricotta (1 cup)
  • Honey (3 tbsp, plus extra to finish)
  • Fresh figs (6–8, halved)
  • Orange zest (1 tsp)
  • Lemon juice (1 tsp)
  • Toasted pistachios, chopped (1/3 cup)
  • Extra-virgin olive oil (1 tsp)
  • Flaky sea salt (to taste)
  • Freshly ground black pepper (optional, a few grinds)

Instructions

  1. Toast the bread slices until golden and crisp. Keep warm on a rack.
  2. In a small bowl, whisk the ricotta with orange zest, 1 tablespoon honey, and lemon juice until smooth and slightly airy; season with a pinch of flaky salt.
  3. In a small skillet over medium-low heat, combine 2 tablespoons honey with 1 teaspoon water and warm until runny. Add the halved figs cut-side down and simmer 1–2 minutes until slightly softened and glazed, turning once; remove from heat.
  4. Spread a generous layer of the whipped citrus ricotta on each warm toast slice.
  5. Arrange the warm honeyed figs atop the ricotta, spooning any pan glaze over them. Sprinkle with chopped toasted pistachios and finish with a light drizzle of olive oil.
  6. Season with a few flakes of sea salt and an optional grind of black pepper. Serve immediately while the toast is still warm.

Tips or Variations

  • For extra richness stir 1–2 teaspoons of mascarpone into the ricotta before spreading.
  • Swap figs for thinly sliced pears or roasted peaches when figs are out of season.
