Ingredients
- 1-1/2 pounds small red potatoes
- 2 tablespoons olive oil
- 2 tablespoons crumbled feta cheese
- Minced fresh cilantro, for garnish
- HARISSA VINAIGRETTE:
- 1/4 cup olive oil
- 2 tablespoons harissa chili paste
- 2 tablespoons lemon juice
- 2 teaspoons maple syrup
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
Instructions
- Preheat oven to 450°. Place potatoes in a large saucepan; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, until tender, 15-20 minutes. Drain.
- Drizzle oil over the bottom of a 15x10x1-in. baking pan; arrange potatoes over oil. Using the bottom of a glass or a potato masher, flatten potatoes to 1/2-in. thickness.
- In a small bowl, whisk together the harissa vinaigrette ingredients; spoon over potatoes.
- Roast until golden brown, 15-25 minutes. Sprinkle with feta cheese and cilantro before serving.
