- 1 cup chopped onion
- 1 cup chopped sweet red pepper
- 1/2 cup chopped celery
- 4 garlic cloves, minced
- 1 teaspoon salt
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- 1/2 teaspoon pepper
- 1/4 teaspoon dried thyme
- 1/4 teaspoon cayenne pepper
- 2 cans (15 ounces each) black-eyed peas, rinsed and drained
- 1/2 cup reduced-sodium vegetable broth
- 1 tablespoon reduced-sodium soy sauce
- 1 teaspoon liquid smoke
- 2 tablespoons minced fresh parsley

In a large saucepan, heat oil in over medium heat. Add onion, pepper and celery; cook until soft, 4-5 minutes. Add garlic, salt, paprika, oregano, pepper, thyme and cayenne; cook one minute longer.
- Stir in peas, broth, soy sauce and liquid smoke. Bring to a simmer; cover and cook 15-20 minutes, stirring occasionally. Stir in parsley.
